Garden tasks in winter

Hi all. My partner and I have access to a garden that's fairly overgrown. We originally thought we'd be moving in February, so didn't do much with the space except harvest what's there and start a compost pile. We learned this week that we're going to be living here through october, so we're interested in prepping stuff for planting once spring comes around.

Normally I would weed/clean/prep beds and cover with tarps for the winter, but we definitely didn't do anything in the fall to prep for spring. Anyone have any advice on what things we could be doing in winter? Or would it be just better to wait until the deep cold is over?

Geographic context - temperate European climate at 800m altitude.
