I spent yesterday afternoon preserving mangoes.
It is a simple recipe consisting of mango, water and citric acid (in the ratio of 1 teaspoon citric acid to 1 litre water - to ensure a safe acidity level). Sugar is optional.
I used No.27 Fowlers bottles (850ml), filling each to about a quarter full with the preserving liquid, then adding mango quarters. I added 1 tablespoon of sugar to each jar, half the quantity for a light syrup, but I've bottled them without sugar in the past. After sealing and clipping the lid in place they went into the Fowlers preserver for just under an hour.
This morning I checked seals, washed and labelled jars, then into the preserves pantry with them.
